  • ⅓ cup low sodium soy sauce
  • ¼ cup canola oil
  • 3 tablespoons honey
  • 1 tablespoon minced garlic (about 3 cloves)
  • 2 teaspoons chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon ground black pepper
  • 1 red bell pepper, cored and cut into 1 ¼-inch pieces
  • 1 yellow or orange bell pepper, cored and cut into 1 ¼-inch pieces
  • 8 ounces whole baby bella mushrooms, halved if large
  • 1 small red onion, cut into 1 ¼-inch cubes
  • Skewers (if using wood, soak in water for 30 minutes before grilling)
  • Oil for brushing the grill grates
